B. in der Kühlanlage, über Zahlencode-Eingabe mit persönlicher PIN bis zum Biometrie-Scan bieten sich für Sicherheitsbereiche un-begrenzte Möglichkeiten. Spezielle Kontrollen können zusätzliche Hochsicherheit schaffen, wie mit dem Vier- Augen-Prinzip, wobei sich zwei Lesegeräte in einiger Entfernung zueinander be-finden. Eine Aktivierung wird nur dann möglich, wenn zwei bestimm-te Personen gleichzeitig an je einem der Lesegeräte agieren. Sauber und rein Die Fleischbetriebe und ihre Mitarbeiter müssen gesetzli-che Hygienestandards erfül-len, wie das Tragen von spezi-eller Betriebskleidung, deren Zuführung ebenfalls über Le-ser funktioniert: Jede Person erhält passgenaue, chemisch gereinigte Kleidung – nur mit dieser ist der Zutritt zu den Betriebsstätten erlaubt. Mitar-beiter- Spinde lassen sich z. B. durch eine neue Lösung von Miditec Datensysteme sichern, indem bis zu 80 Spinde an eine Baugruppe angeschlos-sen sind. Das Personal hält eine Transponderkarte vor einen Kontrollleser und der per Software zugeordnete Spind öffnet sich. Im System ist da-mit jederzeit nachvollziehbar, an welchem Schrank war. Eine technische Vorrichtung sorgt dafür, dass zunächst alle Mitarbeiter ihre Hände hyg-ienisch rein gesäubert haben, bevor die Fleischverarbei-tungshallen betreten werden. In einer speziellen Schleuse werden nochmals die Schuh-sohlen desinfiziert und sicher-gestellt, dass Mitarbeiter kei-ne Fremdmaterialien in die-sen Arbeitsbereich einführen. Dies ist besonders wichtig, um das Risiko von Bakterien oder schädlichen Partikeln im Frischfleisch zu verhindern. Anhand solcher Zugangskon-trollen lässt sich ebenfalls do-kumentieren, wie lange sich ein Mitarbeiter in einem ent-sprechenden Arbeitsbereich aufgehalten hat. Diese Kont-rollen sind essenziell für Be-reiche, in denen sich ein Mit-arbeiter nur für eine kurze Zeit aufhalten darf. Ebenfalls kann nachverfolgt werden, dass nur autorisierte Mitarbeiter ent-sprechende Räumlichkeiten betreten haben. Der Ausgang aus den Produktionsräumen sollte räumlich getrennt sein, damit keine Schadstoffe in die Betriebsräume gelangen. Einen Vorteil für das Perso-nalmanagement bietet darü-ber hinaus die elektronische Zeiterfassung. In Kombina-tion mit der Software-Lösung MTZ-Time buchen Personen an entsprechenden Terminals ihre Zeiten, die unmittelbar im System erscheinen. Nach Erfassung der Daten im Un-ternehmensnetzwerk ergeben sich unterschiedliche Manage-mentoptionen. Arbeitszeiten, Urlaube und Dienstreisen kön-nen in übersichtlichen Listen dokumentiert werden. For instance, managers of the com-pany have access to the company around the clock, while lab-oratory personal only has access to certain rooms at particular times. The compo-nents can be altered according to their area of application. There are almost unlimit-ed possibilities to manage safety areas, reaching from simple card readers to open or lock doors e.g. in the cooling area, to number codes with a personal pin code up to bio-metric scans. Special control can additionally provide for maximum security such as double-verification where two scanners are installed in a cer-tain distance to each others. The system can only be ac- tivated if two particular per-sons activate both scanners at the same time. Clean and pure The meat producing company and its employees have to fulfil obligatory hygiene standards. These include special clothing, which are made accessible by a scanner as well: Every per-son is provided with chemi-cally laundered clothes in the right size – only if they wear it, they are allowed access to the production area. Emp-loyee lockers can for example be equipped with a solution provided by Miditec Datensys-teme, which allows for 80 indi-vidual locker to be connected to one assembly. The perso-nal simply holds a transpon-der card in front of the control scanner in order to open a par-ticular locker. In this way the system can always traces the person who opened the locker. A device ensures the emp- loyees clean their hands hygie-nically clean before they enter Sicherheit Safety the meat processing hall. At a special sluice, the shoe soles are sterilised, which ensures that the employees don‘t bring in foreign material into the area. This is especially impor-tant in order to prevent the risk of bacteria or harmful particles contaminating the fresh meat products. By means of these types of access controls it‘s also possible to document for how long an individual employees was staying in a particular area. These controls are essen-tial for areas where employees are only allowed for a short period of time. It‘s also possible to control that only authorised personal enters the respective production area. The exit from the production rooms should be separated from the ent-ry in order to ensure that no contaminants are brought into the production rooms. When leaving the production area, the employees dispose of their clothing in special containers. These containers are picked up by specialised companies which the chemically launder the clothing. Another advantage for human resource management is the electronic recording of attend-ance. In combination with the software solution MTZ-Time, employees register at a termi-nal and their working times are immediately available in the system. When the data is captured by the company net-work, it‘s possible to choose from several management op-tions. Working times, holidays, and business trips can be dis-played in the form of clearly ar- ranged lists. It‘s possible to select daily, monthly or annu-al lists. Automatic work time management and shift(change) identification simplify and shorten daily processes that are part of human resource man-agement. Quality and func-tionality of daily processes in the meat industry – form prod-uction to organisation – can be ensured and controlled by these types of solutions.
