This applies to both vegetative cells and spores, i.e. it‘s possible to obtain a desired pasteurisation or sterilisation effect at low tem-peratures. Pasteurisation Pasteurisation is a gentle method of heat treatment of food where most vegetative germs including pathogenic spores are eliminated. Heat resistant endospores of bac-teria and some other vegetative germs however survive this type of heat treatment. Pasteurisation is mostly done at temperatures between 65°C and 85°C. Amongst others cooked sausages (85°C) and sausages to be heated in water (75°C) as well as canned ham (65°C) are pasteurised. The core of the prod-uct should be treated at a tem-perature of 71°C for at least 10 minutes. The final products should be cold stored. Temperatures of more than 71°C in the core of saus-ages to be heated in water of-ten cause separation of fat and water i.e. the fat-water emulsion is getting unstable.
