Messe-Nachbericht FT-AWARDS 2015 Fleischprodukte im Wettbewerb erfolgreich abgrenzt. Bettcher überzeugte die Jury in der Kategorie „Schlachttechnik- und Zerlegetechnik“ mit der neu entwickelten Rundmesserserie Quantum®. Der Hochleistungs-Trimmer er-reicht deutlich höhere Geschwindigkeiten als übliche Modelle. Eine Steigerung um 30 bis 80 % der Geschwindigkeit der Klinge ermög-licht es, in der gegebenen Arbeitszeit den Fleischertrag deutlich zu steigern. Dafür wurde die Messerkonstruktion überarbeitet. Insge-samt erreicht die Klinge nun zwischen 6.350 und 6.700 Umdrehungen/ Min. Durch einen Motor, der die Leistung permanent anpasst, werden bis zu 60 % Energie gespart. R The FLEISCHEREI TECHNIK AWARD was awarded to outstanding innovations in the ca-tegories „Processing machines“, „Quality ma-nagement“, „Automation/logistics“, „Packaging technology“ and „Slaughtering technology“. The winner innovations Laska dominated the category „Processing machines“ with the newly developed crate filling station for E2 crates.  Minced material is conveyed via a conveyor belt directly into the funnel of the machine. There it is adapted to the 36 2/2015 dimensions of an E2 crate and finally portioned into the crate. The advantages of the filling sta-tion over the previous manual filling lie in the large time-saving and improved hygiene as the „critical“ contact with people is considerably  reduced. A plus point is the avoidance of raw material and resource losses. No more material falls next to the crates and has to be removed. Friedr. Dick won the „Quality management“ category with its RFID system for knives. Instead of individual markings on the grip or on the blade of the knife, integrated and clear coding by means of RFID chips guarantees continuous monitoring of the knife and error-free allocation. The system ensures food quality and safety in that it raises the awareness of the personnel. The aim of the solution is to assure the quality of the working process and to docu-ment them contactlessly and without special ef-fort. The user therefore has a complete system available for continuous documentation. Maschinenbau Helmers came through in the category „Automation/logistics“. With its solutions, the company helps to decisively increase the degree of automation in food-pro-cessing enterprises. An example of this is the recently completed palletising line in one of the largest abattoirs in Germany. Previously trays with packed fresh meat were manually packed and placed on pallets. With solution by Maschi-nenbau Helmers the crates are now supplied and palletised completely automatically. The customer is now achieving a throughput of 128 pallets per hour and is able to save manpower to the tune of approx. 1.8 million E per year. Sealpac won in the category „Packaging technology“. With the TraySkin®-xplus – TenderPac by the Oldenburg company, it is now possible for the first time to present meat ageing in an appealing way in self-service format. A dual- chamber system ensures that seeping meat juices are separated from the meat pro-duct. The packaging solution makes controlled ageing at the point of sale possible, helping to give the products a tender consistency and pro-nounced meaty flavour. The tightly applied skin film also emphasises the natural structure of the meat in attractive purchase-promoting manner. In the category „Slaughtering and butchery technology“ Bettcher impressed the jury with the newly developed Quantum® round cutter series. The high-performance trimmer achieve much higher speeds than conventional mo-dels. An increase of 30 to 80% in the speed of the blade makes it possible to increase the meat yield considerable during working time. Overall the blade now achieves between 6350 and 6700 revolutions per minute. Through the intelligent motor which permanently adapts the output, the device saves up to 60 % energy.R Schnell und effizient Entvliesen Mit der Kombi-Maschine EVMsplit 4006 von MAJA lassen sich die Arbeitsprozesse beim Entvliesen optimieren und die Ausbeute an wertvollem Magerfleisch steigern. Um das Entvliesen größerer Teilstücke zu optimieren, verfügt die kombinierte Entsehn- und Entvliesmaschine über eine Trans-portwalze mit zwei unterschiedlichen Zahnmustern: Auf dem linken grobverzahnten Drittel werden anhaftendes Fett und Sehnen entfernt. Über den rechten Bereich, der zwei Drittel der Transportwalzenoberfläche ausmacht, wird mit der Feinverzahnung das Vlies abgenom-men. Da sich die vorbereitende manuelle Entfernung von Sehnen und Fett mit dem Entvliesvorgang kombinieren lässt, geht die Be-arbeitung schneller vonstatten. Es wird vermieden, dass durch wiederholte Entfettungs- und Entsehnungsversuche mit einer ausschließlich feinverzahnten Entvlies-maschine wertvolles Magerfleisch entnommen wird. Wie alle Entvliesmaschinen der EVM-Baureihe bietet auch EVMsplit 4006 dank ihres ergonomischen Maschinendesigns hohen Bedienkomfort. Da es keine seitlich angebrachten Einstellhebel gibt, kann sie beliebig und seitenunabhängig in Zerlegelinien integriert werden. Das Handling des Messers ist auf die Bedürfnisse des Anwenders zugeschnitten. Zum Mes-serwechsel ist kein Servicepersonal nötig. Dieser geht sekundenschnell und einfach ohne Werkzeug vonstatten. Das Messer wird über einen Schnellspannverschluss fixiert. Der Messerhalter verbleibt auch beim Rei-nigen in der Maschine und wird nur in Reinigungsstellung gebracht. Die Maschine wird durch ein Fußpedal in Flachmaterial in Gang gesetzt, damit bei längerem Betrieb keine Druckstellen am Fuß des Bedieners entstehen. Noch bequemer wird die Arbeit mit der Option Bedienerpodest. Dann steht der Bediener auf einem Gitterrost und nicht auf dem Fußboden. Special ANZEIGE
