basal metabolic rate (BMR) is a significant value. Apart from the body‘s resting metabolic rate, the BMR includes the energy requirement for the heartbeat, smooth muscle cells, breathing and the adenoid functions. The brain‘s share in the BMR amounts to 25%, although it only accounts for 2% of the body weight. The BMR based on the body weight of women is generally 10% below that of men. As one gets older, the BMR decreases accordingly. The muscle mass of adolescents accounts for approx. 45% of the body weight and decreases to 27% in the case of a 70 year old person (Elmadfa and Leitzmann). Another aspect is the digestibility of food. If for instance an energy amount of 2,200kcal is availa-ble, a person with a good metabolism can gain weight while others with a less effective metabolism might keep their weight or even lose weight. A healthy nutrition Meat is an important source of nutrients. It should be highlighted that meat is a major source of Vitamin B12 that practically only occurs in food of animal origin and yeast products. Meat contains several essential minerals such as iron, zinc, copper and magnesium. Vegetarians do not eat meat, sausage products or fish. Vegans shun any kind of animal products. A purely vegetable diet covers mineral and vitamin requirements to a large degree, however, it also needs a certain dietary mix in order to avoid a short supply of vitamin B12, calcium, iodine or iron. Because of the low biological value of vegetable proteins, it is necessary to combine different protein sources. This is possible without problems if eggs and dairy products are included in a diet. Vegetarians prefer fruits and vegetables as well as whole grain products and there- fore take in more carbohydrates and less fat and cholesterol. Obesity, cardiovascu-lar diseases, heart attacks and strokes oc-cur less often. This eating habit is similar to the Mediterranean diet. However, meat is also a part on the menu in South-Euro-pean countries, albeit to a low degree. Nutrition-related diseases These diseases include dental decay, obesity, anaemia, disease of the coronary system, diabetes mellitus and gout. Diabetes is a disease of the metabo-lism. Obese people and those drink-ing alcohol in excess are more likely to suffer from this disease. Type II of Dm accounts for 95% of those suf-fering from diabetes. It often entails a risk of arterio-sclerosis. The course of disease can be summarised as: increased blood sugar level, glucoses in the urine, thirst and dehydration of the tissue. Since the body loses sugar, it lacks this energy source. The most important objective is to find the right individual adjustment. In Germany, approx. 3% of the male population are diagnosed with gout. Patients suffer from an increased uric acid level in the blood. In the initial stage of gout, uric acid is mainly deposited in the joints (big toes).
