Bei Kontrollen wird zwar die Injektionsrate als im Mittelwert korrekt er-scheinen, das hergestellte Pro-dukt jedoch hat innerhalb des einzelnen Stückes völlig un-terschiedliche Qualitäten. Angepasste Injektion Die gute Nachricht besteht da-rin, dass diese Besonderheiten des Muskels in einer hohen Gleichmäßigkeit ausfallen. Die Größe, d.h. Länge des Muskels und der sich verändernde Ver-lauf seiner Struktur ist wei-testgehend gleich. Dies macht sich die patentierte ACI-Tech-nologie von Schröder zunutze. ACI, was für Area Control In-jection steht, ermöglicht den Pumpendruck des Injektors stufenlos, von Takt zu Takt zu verändern, bezogen auf seine Position. Hintergrund ist der mechani-sche Transport des Schweine-lachses durch den Injektor. Ein Takt eines Injektors, besteht aus dem Absenken der Nadeln und der Injektion, sowie dem anschließenden Vorschub mit seiner jeweiligen einstellba-ren Länge. Damit bewegt sich der Schweinelachs Schritt für Schritt durch den Injektor. Im Einzelnen geschieht fol-gendes: Der Muskel wird in verschiedene Zonen eingeteilt. In der Praxis haben sich drei bis fünf Zonen als optimal he-rausgestellt. Diese werden im Programm des Injektors hin-terlegt. Ebenso hinterlegt wird die Anzahl der Schritt welche der Injektor braucht um den Lachs durch die Injektionszo-ne zu fördern. Jeder einzel-nen Zone, kann der Bediener am Programm einen eigenen Pumpendruck zuordnen. Wird der Schweinerücken jetzt durch die Maschine geför-dert, ändert der Injektor beim Erreichen der nächsten Zone selbstständig den Pumpen-druck und versorgt damit jede einzelne Zone des problemati-schen Muskels mit seiner eige-nen Lakemenge, welche von diesem auch aufgenommen werden kann, bzw. muss. Das Ansteuern der richtigen Zone, erkennt der Injektor selbst. Die Lachse werden längs zur Laufrichtung auf den Rechen der Maschine aufgelegt. The brine absorp- tion capacity of the belly differs significantly from other parts. If one of the brines described above with a salt concentra-tion of far more than 30% is used with an injection rate of 10%, a deviation of just 1% in any section of the muscle can have crucial consequences for the quality of the final product. This challenge also concerns the curing process of pork ten-derloin. The tissue of this type of muscle differs significantly on both ends. On the ham side, the meat is solid which makes it dense, while on the nape side, the meat becomes softer and has a looser structure. A usual injector applies a pump pressure setting which is as constant as possible, en-suring an even flow rate of brine However, the meat is not able to absorb this brine volu-me constantly. The ham side inevitably receives less brine, whereas only an area in the middle receives the accu-rate quantity. The salt content on the nape side on the other hand will be too high. Al-though the average in-jection rate seems to be accurate during checks, the treated product will have completely different characteristics within the indi- vidual pieces. Adjustable injection The good news is that these characteristics are very even-ly distributed in the muscle. The size, i.e. the length of the muscle and the way it varies in structure from one end to the other are largely the identical. The patented ACI technology from Schröder Maschinenbau uses this fact. ACI (Area Con-trol Injection) makes it pos-sible to adjust the pressure of the injector pump continuous-ly from one cycle to another according to its position. This is due to the mechani-cal transport of the pork ten-derloin through the injector. A cycle of the injector con-sists of needle lowering and of the injection process, fol- lowed by forwarding of a pre-set length. In this way the pork tenderloin moves through the injector on a step-by-step basis. The following process happens in particular: The muscle is divided up into dif-ferent zones. In practice, three to five zones have proved to be optimal. These zones are saved in the computer pro-gram of the injector. The program also stores the num-ber of cycles that the injector requires to convey the ten-derloin through the injection zone. The operator assign varying pump pressures to the individual zones. When the pork saddle is con-veyed through the machine, the injector automatically changes the pump pressure as soon as the next zone is reached. This method ensu-res that each individual zone of the problematic muscle re-ceives exactly that quantity of brine, which can or must be absorbed by the treated muscle section. The injector defines the location of the cor-rect zone automatically.
