Hierbei lag ein be-sonderes Augenmerk auf der Auto-matisierung der Produktionsabläufe. Ferner waren die Bereiche der Le-bensmittelsicherheit ein viel beachte-tes Thema. Hygiene, Kennzeichnung und Rückverfolgbarkeit entlang der gesamten Prozesskette sind wichtige Faktoren für eine gleichbleibend hohe Qualität in der fleischverarbeitenden Wirtschaft. Ein weiterer Fokus lag auf Ingredienzien, Gewürzen, Hilfsstoffen, Därmen und Packmitteln. Im Rahmen dieser Leitmesse ver-lieh die Redaktion der FLEISCHEREI TECHNIK zudem den begehrten In-novationspreis, den FLEISCHEREI TECHNIK Award 2013 und prämierte damit zum 2. Mal herausragende Ent-wicklungen für die fleischverarbeiten-den Betriebe. In diesem 2. Teil der IFFA-Nachschau präsentieren wir Ihnen weitere High-lights und die Gewinner des wich-tigen Branchen-Awards. One of the main aspects at this year’s IFFA was the sustainable use of energy and resources. Particular atten-tion was paid to the automation of production processes. Another very important subject was food safety. Hygiene, labelling and traceability along the whole process chain are vital for con-sistent high quality in the meat-processing sector. Another focal point was on ingredients, spices, additives, casings and packaging materials. On the occasion of the leading trade fair, the editorial staff of MEAT TECHNOLOGY was also presenting the winners of the renowned FLEISCHEREI TECH-NIK award 2013, which for the second time honours extraordi-nary developments for the meat processing industry. In this second part of the IFFA review, we present further high-lights and the winners of this important industry award. Sowohl die Aussteller als auch die Besucher waren mit der Qualität der IFFA, die vom 4. bis 9. Mai 2013 die Branchen-Plattform der Innovationen darstellte, sehr zufrieden. Both exhibitors and visitors are very satisfied with the quality of the IFFA, which took place from May 4 to 9 this year and presented itself as a platform of innovations for the meat industry.
